* To make GF just use all-purpose gluten-free flour.
* Rise dough for 45 mins to 1 hour (longer the better)

* Bake at 180 degrees Celsius for 30minutes

1 cup warm plant milk (not too hot or cold, just like a warm bath otherwise the yeast will not work)
1 sachet 7g of dried yeast
1 tsp of unrefined cane sugar

3 cups white spelt flour
1/3 cup unrefined cane sugar or coconut sugar
1 tsp cinnamon
1/2 tsp mixed spice
1/2 tsp nutmeg
1/4 tsp salt
1/4 cup of each sultanas, cranberries & currants. I also love adding candied ginger
2 tbsp orange zest
1/4 cup apple sauce

1/3 cup of spelt flour
1/4 cup water

Maple syrup or use jam

Hey everyone, welcome back to another video. Today I'm showing you a recipe for vegan hot cross buns as Easter is approaching and you may notice as well that this is not my kitchen my friend Fonzie is currently moving out of his apartment and I thought I'd utilized this beautiful kitchen because it reminds me of my old one. So you may see more videos from here. Sorry if it sounds echo, it's because there's nothing in here. So just excuse that but let's just get straight into the recipe in a small bowl combine the one cup of plant milk 1 teaspoon of sugar and one sachet of dry yeast This is 7 grams Give that a whisk and then let it set aside for around 5-10 minutes and it will begin froth up. In a large mixing bowl add in 2 cups of flour, I'm using the spelt flour but you can use gluten free flour 1 teaspoon of cinnamon 1/2 teaspoon of nutmeg and a 1/2 teaspoon of mixed spice. Some salt around 1/4 teaspoon 1/3 cup of unrefined cane sugar and give that a whisk So you'll know that the yeast worked properly if it becomes frothy like this Next add in the milk mixture to the dry ingredients Add in a 1/4 cup of applesauce Slowly add in a half cup of spelt flour just to get a bit more sticky the dough until it starts to come together. That is what it's looking like. one more half cup and see how that turns out So now I'm just going to flour the bench pop that on there And just add flour as needed you don't want it to obviously be too dry but not too wet or sticky. So I almost forgot the most important ingredients, the dried fruits Some I'm going to add that in now and work it through Add in some orange rind and work that through. Once that's done pop it in a clean bowl. Place a tea towel over the top You're going to set this in a warm dark place for around 40 minutes It depends on the flour you use. Gluten free will take longer. Spelt flour takes around 30 to 40 minutes for it to rise nicely Okay, so I got my dough here and it's sitting for around 35 minutes. It is ideal to leave that for as long as possible is so like an hour. But I'm in a rush like always.. so I'm just going to do it now So what you want to do is punch it, get the air out. pop it onto the bench Next grab the baking dish and form balls of the dough and pop it in there. So this should make around I think six or eight balls So this is made exactly six buns and now again set it aside for 30 minutes until they have doubled in size So in a small bowl, we're just going to combine 1/3 cup of flour 1/4 cup of water So for this step it's ideal to have a piping bag. I do not have one here so I'm just gonna use the spoon and do my best job to Make a cross perfectly Pop these in the oven to bake for 30 to 40 minutes until they are light fluffy and golden Done they don't look exactly how I anticipated but maybe the inside will be really good. Going to put some maple syrup over the top as a Glaze I don't have a brush for this so again improvising, I'm just using my spoon. Okay so I've put them on a plate and I cut one open and look how good it is The top was like deceiving but the inside is soo fluffy. let's give it a taste mmm These are some damn good vegan healthy hot cross buns Thank you so much for watching and I'll see you all in my next video.
